Dehesa de Extremadura may disqualify either the pig as it is being raised, or the product while it is being crafted or after it is finished.
Founded in 1990, the Extremadura designation of origin is one of the strictest in Spain in terms of certification of the origin, crafting and quality of Iberian products.
To attain this endorsement, the entire process, from raising the pigs to crafting the Iberian products, must be performed wholly within the Autonomous Community of Extremadura, the only way to guarantee the utmost control, which is carried out in three phases.
